They add pizzazz to appetizers such as delicious stuffed jalapeno poppers, pickles, and pepper jellies and jams. When smoked and dried at their red-ripe stage, they are known as chipotles. The name jalapeno is derived from the town in Mexico where these peppers were originally cultivated.
